Food allergens are naturally occurring proteins that can cause allergic reactions to some people. The allergic reactions vary - from simple itchy skin to something as life-threatening as anaphylaxis. Various foods can cause such allergic reactions, however, eight types of food (also known as the Big 8) account for as much as 90% of all documented cases: eggs, milk, peanuts, tree nuts, fish, crustaceans, wheat, and soy. Based on available data, Filipinos are most susceptible to fish and shellfish allergies. With this, various international and local regulations - like the DOH FDA-mandated Administrative Order No. 2014-0030 stating the inclusion of allergen labelling on food products - were implemented in order to control food recalls and other cases related to food allergens, which required food manufacturers to properly label their products to avoid staggering consequences.
