Innovative Microbiological Testing Solutions

Microbiological analysis is important in determining the safety and quality of food. Conventional methods can be labor-intensive, time-consuming, and costly; advances in these methods have been limited to the development of instruments and culture media. In this age of innovative technology, rapid systems in microbiological testing are readily available. These systems minimize human involvement, provide rapid results, and reduce costs. However, it is empirical that the tools used are accurate, sensitive, and efficient.

PARAMETERS
The following are some information on the most common food pathogens according to the US FDA:
BASICS Widespread occurrence in animals, especially in poultry and swine. It is an important environmental contaminant in food producing facilities.
SOURCES Raw and undercooked eggs, raw meat, poultry, seafood, raw milk, dairy products, fresh produce, and the environment
SYMPTOMS Diarrhea, fever, vomiting, headache, nausea, and stomach cramps.
Must-Know: Symptoms can be more severe for people in high-risk groups, such as pregnant women.
INCUBATION 12 to 72 hours after eating food contaminated with as few as 15 to 20 cells.
DURATION 6 to 48 hours
BASICS A group of bacteria that can produce a variety of deadly toxins
SOURCES Meat (undercooked or raw hamburger), uncooked produce, raw milk, unpasteurized juice, and contaminated water
SYMPTOMS Severe stomach cramps, bloody diarrhea, and nausea. It can also manifest as non-bloody diarrhea or be symptomless.
Must-Know: E. coli O157:H7 can cause permanent kidney damage which can lead to death in young children.
INCUBATION Usually 3 to 4 days after ingestion, but may occur from 1 to 10 days after eating food contaminated with 10 to 100 cells
DURATION 5 to 10 days
BASICS A bacterium that can grow even at refrigerated temperatures.
Must-Know: Listeria is a prolific biofilm producer and environmental contaminant.
SOURCES Refrigerated, ready-to-eat foods (meat, poultry, seafood, and dairy – unpasteurized milk and milk products or foods made with unpasteurized milk).
SYMPTOMS Fever, headache, fatigue, muscle aches, nausea, vomiting, diarrhea, meningitis, and miscarriages
Must-Know: Listeria can cause serious illness or death in pregnant women, fetuses, and newborns.
INCUBATION 9 to 48 hours after ingestion, but may occur up to 6 weeks after eating food contaminated with  approximately 1,000 cells
DURATION Variable
BASICS Must-Know: Children under age one (1) have the highest rate of campylobacteriosis.
Unborn babies and infants are more susceptible on first exposure to this bacterium. In addition, there is a low threshold for seeking medical care for infants. Campylobacteriosis is identified as an antecedent infection associated with Guillain-Barre syndrome, an auto-immune disorder.
SOURCES Raw milk, untreated water, raw and undercooked meat, poultry, or shellfish
SYMPTOMS Diarrhea (sometimes bloody), stomach cramps, fever, muscle pain, headache, and nausea
INCUBATION Generally 2 to 5 days after eating food contaminated with approximately 500 cells
DURATION 2 to 5 days

Soleris® and BioLumix®

Automated Real-Time Systems for Routine Microbiological Testing
The Soleris® system is a rapid optical system for the detection of microbial contamination based on an innovative application of classic microbiology. The optical assay measures microbial growth by monitoring pH and other biochemical reactions that generate a color change, as microorganisms in the broth grow and metabolize nutrients. The results are monitored by the system providing an alert for samples that are out of specification. Sensitivity ranges from a single organism per vial to 108 cfu/mL (upper limit). The Soleris® system is applicable for food and feed manufacturers. Some parameters include Alicyclobacillus (ACB), Coliforms, Lactic Acid Bacteria, Osmophilic Yeast, Yeast and Mold, E. coli, and Total Viable Count.

BioLumix® provides accurate and rapid microbiological answers in a complete system approach using an inexpensive and simple format. The new patented technology is based on monitoring changes in a broth medium in which target microorganisms grow and are detected by changes in color or fluorescence. The reagents or the sensor change their color or fluorescence as metabolic processes take place. These changes are detected by an optical sensor and are monitored 10 times per hour. BioLumix® is available for nutraceutical, pharmaceutical, and cosmetics industries. Some parameters include Gram Negative Bacteria, Enterobacteriaceae, Pseudomonas, and, Staphylococcus aureus.
